Quick and Easy Kale and Mashed Potatoes Recipe

Kale Mashed Potatoes Recipe

Kale is the hottest vegetable right now. And there are those who can’t get enough of it and then there is the rest of us who can’t get on board. After trying several kale dishes, I finally found this Kale and Mashed Potato recipe. It’s so simple to make and is quite yummy. It’s perfect as a side dish or even as main meal if you are vegetarian. And best of all, it is super simple to make and only takes 20 minutes to make.

Ingredients for Kale Mashed Potatoes

 

Kale recipe ingredients

  • 3 -4 large potatoes, depending on the size of the potatoes (feel free to mix up the types of potatoes)
  • 1 tablespoon salt (add more based on your taste)
  • 1 garlic clove, peeled (add more if you are a garlic lover like me)
  • 1 large bunch kale, any variety, large stems removed, leaves coarsely chopped
  • 2 tablespoons olive oil
  • Freshly ground black pepper
  • 2 tablespoons parsley, for garnishing

Directions for Kale Mashed Potatoes

1. Cut up potatoes into 1-1/2-inch chunks. Add them to a saucepan with cold water along with salt and garlic and bring all the ingredients to boil. After it comes to a boil, reduce the head to simmer and cook potatoes until tender.  This should takes about 5 minutes.

2. Add the kale to the potatoes. You can continue cooking until the kale is tender and the potatoes are soft so you can mash them together.

3. Save 1/2 cup of the cooking water for use later.

4. Drain the potatoes and kale in a colander and transfer to a large bowl.

5. Add 1 tablespoon of the reserved cooking water and the olive oil and mash to a chunky texture.

6. Add reserved water if the mixture looks dry.

7. Add  black pepper and more salt to taste

Optional

  • Add parsley. The red sauce is red pepper sauce my brother added but was not really to my liking nor my daughter’s.
