Easy to Make Mickey Mouse Cupcakes

Who doesn’t love cupcakes? Instead of boring old cupcakes with frosting, it’s my plan to try to attempt to liven up my cupcakes but given my schedule, I did not want to make it too complicated.

So why not start with a super simple cupcake recipe inspired from my favorite Disney character Mickey Mouse.

Mickey Mouse Cupcakes

Ingredients

  • 12 Cupcakes of your choice (I toggle back and forth between homemade and box
  • 6 Oreo cookies and 12 Oreo mini-cookies (substitution: store brand sandwich cookies)

Frosting  (see my super simple frosting recipe below or use store bought frosting)

  1. Frost the cupcakes
  2. Cut the cookie into halves
  3. To create the top of the mouse head
    • Gently push one half of a regular cookie (with the unfrosted side facing forward) halfway down into the center of a cupcake
  4. For mouse ears
    • Place the  mini cookies  behind and to the sides of the head and press the cookies into the frosting deep enough to hold them in place.

Makes 12 cupcakes

Buttercream Frosting (frosts 24 cupcakes)  recipe courtesy of The Cake Doctor Returns by Anne Bryan

4 tablespoons butter, at room temperature
3  cups confectioners sugar, sifted
2 to 3 tablespoons milk
1 teaspoons pure vanilla  extract

1. Place the butter in a medium-size bowl and beat with an electric mixer until fluffy
2. Add the confectioners’ sugar and 3 tablespoons milk, a little at a time, beating with mixer at low speed for about 1 minute
3. Add vanilla and then beat at medium speed and until it’s light and fluffy.
4. Add up to 1 tablespoon more milk if the frosting is too stiff.
